Nutrition Components: Vitamin A & C, and magnesium
Recipe: Golden Squash Griddle Cakes
2 C grated yellow crookneck squash (cheesecloth or colander to squeeze excess liquid)
1/4 C grated cheddar or Oaxaca cheese
1 egg
1/4 C flour or masa harina
1/4 tsp salt
pinch of cumin, chili powder, or seasoning of choice
oil for cooking
Directions: Mix squash, cheese, egg, flour, salt, and spice in larger bowl. Heat skillet with oil and drop spoonfuls of batter into skillet. Flatten slightly, and cook 2-3 minutes or until golden brown.
Serve warm with salsa or yogurt to dip.
