Arizona Local Food Feature





Farm: You can find locally sourced citrus throughout the state and a crop the Arizona is known for! Here are a couple of farms growing citrus:

Justice Brothers Ranch in Waddell, AZ



Nutrition Components: Vitamin C, potassium, and fiber


Recipe: Any Citrus Marmalade

4 C citrus peel, cut into thin strips

4 C citrus pulp, chopped

3 C sugar

Pinch of salt


Directions: Boil peel with 6 cups of water for 5 minutes, drain and repeat process again. Add peel and pulp with 6 cups of water and boil for 5 minutes and let this sit overnight. Then boil the mixture for 30-45 minutes until all ingredients are soft and breaking down. Lower heat and add sugar, stirring until dissolved and simmer for another 30 minutes.

You can serve warm with crackers or toast and freeze remainder to enjoy later!

Classroom Activity Suggestion: Explore the different parts of the citrus by dissecting slices and investigating the pulp, pith, rind, and juice!
