Arugula leaves


Locate: Arugula is a dark leafy green that can be found in grocery stores and farmer's markets. Seeds can also be purchased through Native Seed Search.



Nutrition Components: Vitamin A, C, K, folate, potassium, antioxidants, and fiber


Recipe: Arugula Salad

¾ cup arugula, chopped

½ cup of spinach, chopped

1 cup strawberries, thinly sliced

¼ cup basil, chopped

⅓ cup red onion, minced

1 medium banana pepper, thinly sliced

1 Tablespoon feta cheese

1 teaspoon dill, chopped


Directions: In a large mixing bowl, combine ingredients and mix until thoroughly covered.


Flavor Profile: zesty, bold


Classroom Activity Suggestion: Take around 10-20 seeds and wrap them in the paper towel. Place the paper towel into a plastic bag and let sit in a cool area for a couple days.
