JULY: Yoemi Purple String Bean

Nutrition Components: Vitamin A & C, and fiber


Recipe: Purple Yoemi Bean Hummus

2 Cups beans, green or soaked from dry

2 tbsp olive oil

2 tbsp lemon juice

1 1/2 tbsp tahini

1 garlic clove

salt to taste

cilantro or current favorite herb growing in your school garden!


Directions: Combine beans, tahini, garlic, and lemon juice in a food processor. Slowly add olive oil while blending to desired texture (slightly thin peanut butter).

Add herb, salt to taste, and serve alongside other veggies!

Flavor Profile: umami, salty, sour


Classroom Activity Suggestion: Use a mocajelte or mortar and pestle to blend the beans and garlic with little ones. Use this recipe as a base and create with three different herbs for a taste test to serve in the cafeteria.
