Recipe: School Garden Salad
1 bunch purslane, washed and chopped
1 medium cucumber, diced
5 mild radishes, thinly sliced
1/2 red onion, thinly sliced
1 lemon, zest and juice
1/4 cup olive oil
salt to taste
Directions: In a small bowl, whisk lemon juice, olive oil, and red onion. Toss dressing with remaining ingredients and salt to taste.
Flavor Profile: sour, bitter, salty
